Cooking the Tramuntana

On 24 October, Maristel Hotel & Spa presents one of its most special gastronomic events: “Mallorca: The Echo of Civilisations”, a lunch conceived as a journey through the cultures that, over the centuries, have shaped the identity, flavours and culinary heritage of Mallorca.

For the first time, Maristel brings together around one table six chefs from the contemporary Balearic culinary scene: José Luis Adán (Maristel Bistró), Edgar Rodríguez (Aromata), Juan Pinel (L’Atic), Jhonatan Maldonado (Botànic), David Méndez (Es Balcó de Son Vida) and Javier Escoriza (Olula Café).

ONE LUNCH. SIX CHAPTERS OF OUR HISTORY.

The experience begins on the Maristel terrace, between the sea and the Tramuntana mountains, with an informal welcome featuring snacks and wine. A first moment to meet, share and whet the appetite before the journey begins.

Then, we gather around the table.

Six chefs will interpret six moments in Mallorca’s history through six dishes, accompanied by six carefully selected wines to complete each chapter.

The chefs themselves will introduce their creations, sharing the origins, ingredients and inspiration behind each dish, while our sommelier will present each wine and guide guests through the pairing, revealing its provenance, character and the dialogue it creates with each culinary proposal.

A chronological gastronomic journey from the island’s earliest inhabitants to the flavours and traditions that remain part of the Mallorcan table today:

Each chapter will have its own culinary identity, reinterpreting ingredients, techniques and flavours associated with the different cultures that made Mallorca a meeting point in the Mediterranean.

And because a great meal deserves time, the journey comes to a leisurely close with conversation around the table and petits fours.
